Thankful for Thanksgiving Leftovers!
After the Thanksgiving feast ends, your fridge may very well be stuffed with leftovers. But if a week of turkey sandwiches doesn’t sound appealing, why not make something new and creative out of all that hard work?
Start with homemade turkey stock. Throw the turkey bones and some bits of meat in a pot with celery, carrots, onion, herbs, and water. Cover and simmer for an hour, and then let it cool. Turkey stock will last for up to four months in the freezer. Use it for a soup base, add it to a flavorful risotto, or splash it on sautéing veggies for extra flavor without added fats.
To re-use a little bit of everything from the dinner table, try simple Thanksgiving crescent rolls. Wrap turkey, stuffing, mashed potatoes, and cranberry sauce in crescent roll dough and bake for a tasty, flaky snack.
If you’re in the mood for a different flavor, how about turkey enchiladas? Wrap turkey, cheese, and pinto beans in tortillas. Pour enchilada sauce over the top and bake until everything is warm and melty. Top with sour cream and cilantro for an easy Mexican dish!
And for the sides? Mashed potatoes can be re-purposed into the topping of a hearty shepherd’s pie. Leftover cranberry sauce adds tart sweetness to cranberry sauce muffins. And stuffing makes a great breakfast! Put a helping of stuffing in individual ramekins, and bake for about 15 minutes at 425°F. Then crack an egg on top of each ramekin and put back in the oven for another 8 minutes. You’ll have a filling breakfast in no time.
