Ingredients:
- 12 oz. Box Bowtie Pasta
- 1 Cucumber, peeled & chopped
- 1 Pint of Cherry Tomatoes, quartered or sliced
- 2 Small Carrots, shredded
- 1 Large Radish, shredded
- 1 Cup of Chopped Peppers – red, green, yellow and orange
- 1 Small Can of Pitted Olives, sliced
For Dressing:
- ½ Cup Olive Oil
- 2 Tablespoons Onions, finely chopped
- 1 Garlic Clove, minced
- 1 Tablespoon Parmesan Cheese
- 1 Teaspoon Salt
- ¾ Teaspoon Worcestershire Sauce
- ¾ Teaspoon Dried Mustard
- ¾ Teaspoon Oregano
- ¾ Teaspoon Basil
- ¾ Teaspoon Sugar
- ¾ Teaspoon Pepper
- ¼ Cup Red Wine Vinegar
- 1 Tablespoon Lemon Juice
Directions:
Prep Time: 15 mins | Ready In: 35 mins | Servings: 6-8
- Cook Pasta according to the package directions. Add all of the vegetables to the pasta and stir well.
- In a separate bowl, mix the dressing ingredients together — ½ cup of olive oil, 2 tablespoons of finely chopped onions, 1 minced garlic clove, 1 tablespoon of parmesan cheese, 1 teaspoon of salt, ¾ teaspoon of Worcestershire sauce, ¾ teaspoon of dried mustard, ¾ teaspoon of oregano, ¾ teaspoon of basil, ¾ teaspoon of sugar, ¾ teaspoon of pepper, ¼ cup of red wine vinegar, and 1 tablespoon lemon juice. Pour the dressing mix over the pasta and vegetables and stir.
